Garden Fresh Tea Treat

Summer’s hitting its full stride and the tomatoes are coming in by the truckload.  What to do?  What to do?

This is just one day’s harvest of cherry tomatoes.  So I’m busy making all of my tomato recipes and busy freezing what I can’t cook.  

But why not have an easy summertime tea treat? I made a little bruschetta by dicing up 1 tomato or 8 cherry tomatoes, grabbing 4 fresh basil leaves and cutting them up and adding in 2T crumbled feta cheese. Mix up in a bowl, add salt and pepper to taste, and spoon on some toasted baguette or crackers. Makes about 8 pieces.

It made for a garden-fresh, light afternoon snack served along with some walnuts and grapes. Especially when accompanied by some iced Jasmine Green tea from Harney & Sons. Easy peasy treats for you and a friend.

I keep some rosemary and olive oil Bruschettini crackers on hand just for this sort of thing. No, I didn’t get paid to say that. I just like them and I thought you might too. Check your local grocery store.

Bruschetta

  • 1 tomato or 8 cherry tomatoes
  • 4 fresh basil leaves
  • 2T crumbled feta cheese
  • Salt & pepper to taste
  • 8 toasted baguette slices or crackers

Dice up 1 tomato or 8 cherry tomatoes, chop the basil leaves, mix in a medium bowl and combine with the 2T crumbled feta cheese. Add salt and pepper to taste. Spoon onto the toasted baguette or crackers. Makes about 8 pieces.
