Summertime’s here. Need something cool to go with your tea? Strawberries are in season so I thought I’d share one of my favorite summer pie recipes with you.
1/2 pint whipping cream
4 oz. cream cheese, softened
14 oz. can sweetened condensed milk
2 1/2 cups strawberries, chopped or pureed
3 T lemon juice
2 shortbread cookie pie crusts (or ‘nilla wafer or graham cracker pie crusts, your choice)
Beat whipping cream in a chilled bowl until very fluffy. The more you whip it the fluffier your pie will be. Set aside in refrigerator.
Beat cream cheese until fluffy and gradually beat in sweetened condensed milk.
Stir in pureed strawberries and lemon juice.
Fold in whipped cream.
Pour into crusts. Mixture should mound slightly.
Freeze at least 4 hours.
Notes: I used one pie crust instead of two because I just fill it way up. You can pour the leftover filling into glasses for a nice parfait-type dessert. Also, you can try substituting most any mashable fruit or berry such as blueberries, blackberries, raspberries, peaches, etc.
