Our friends were selling strawberries to raise money for their son’s band and I got a whole flat. Eight one pound containers of strawberries up from Florida! Now what? Start eating fresh strawberries quick! But, you’ve got to do something with them before they spoil. I had a strawberry patch when I was a kid so I learned what to do with buckets and buckets of strawberries. I’m sharing a couple of my favorites because strawberry season will be upon us before we know it.

The next idea is Stewed Strawberries. The recipe is as simple as: chop up strawberries, then cook. You can add sugar to taste if you want to sweeten them a bit more. I added a couple of spoonfuls to a one pound carton chopped up. I normally cook it in a little saucepan on top of the stove over medium low heat while I’m making waffles but today my pan was dirty so I cooked it in the microwave 3 minutes on 60% and stirred every minute. This is a healthy alternative to syrup.
They are also good over pancakes, crepes, french toast, ice cream, shortcake, and brownies.
Yes, my waffle maker makes heart-shaped waffles. It was a wedding gift and we still enjoy it to this day.
I paired the pie and the waffles with a good, clean English Breakfast. The sweetness of the strawberries was enough that you can skip the sugar in the tea. A flavored tea like Earl Grey would have clashed with the strawberries. A fruity tea like my apple tea or cherry tea would have just confused the palate. Sometimes you want to just keep things simple.
